How to make
Mix the honey, mustard, rosemary, black pepper, lemon zest and garlic. Baste the leg of lamb with this mixture, cover it and leave it in the fridge overnight.
Heat the oven to 450°F (230 °C). Put the leg of lamb in a baking dish, smear it with sea salt and roast for 20 min. on high, then lower the heat to 390°F (200 °C) and roast about another 55 min.
