How to cook
Put the cleaned leg of lamb in a greased tray and salt it. Make a homogeneous thick blend by mixing the honey, mustard, black pepper and paprika, spearmint and other spices as desired, also adding in a few tablespoons of oil and some water.
Thoroughly brush the leg all over with this, cover and leave it to marinate for 2 hours.
Then brush it again, add a little water or wine into the tray, cover it with foil and put it in to bake in a low oven for several hours.
