Ingredients

  • For the profiteroles
  • milk - 1/2 cup
  • water - 1/2 cup
  • butter - 4.2 oz (120 g)
  • flour - 4.2 oz (120 g)
  • salt - 1 pinch
  • eggs - 4
  • For the sauce
  • water - 1/3 cup
  • sugar - 1 tbsp.
  • cocoa - 1 tbsp.
  • dark chocolate - 7 oz (200 g)

How to make

Cut the butter into cubes. Heat the water with the milk and salt, and add the butter until it melts. Remove the pan from the heat and pour the flour all at once. Stir vigorously and then return the pan to the heat for another minute, stirring constantly.

Remove the batter from the heat and add 3 eggs one by one. Beat the last egg separately and add it only if the batter is too thick.

Transfer the mixture into a piping bag and shape the profiteroles on a baking tray lined with baking paper.

Put the tray in the oven at 390°F (200°C) for about 30 minutes. Remove them, let them cool and make a slit in each one.

Heat the water for the chocolate sauce, add the sugar and cocoa. Once the mixture boils, reduce the heat and add the cream with the broken chocolate. Stir.

Fill the profiteroles with a little of the syrup, and before serving, pour the chocolate mixture over them generously.
