  • oil - 5 tbsp.
  • paprika - 1 tbsp.

  • black pepper - 5 - 6 grains
  • allspice - 2 - 3 grains
  • salt
  • vinegar - 1 tbsp.
  • black pepper - 1 tsp.
  • coriander - 1 tsp.
  • cumin - 1 tsp.

How to make

The washed and cleaned lamb heads are placed in a pot, pour cold water over them, a teaspoon of salt, 5-6 grains of black pepper, 2-3 grains of allspice and a bunch of lovage. Place the pot on the stove and boil the lamb heads for at least 30-40 minutes.

In a bowl, mix the oil, vinegar, paprika, salt, honey, ground black pepper, coriander and cumin and mix everything well.

Transfer the cooked and cooled lamb heads into a baking pan, spread them with the mixture from the bowl and bake them for about 30 minutes in a preheated oven to 390°F (200 degrees) on the medium rack. If necessary, place the baking pan at the bottom of the oven and bake the heads until they're ready.

The garnish is according to your taste.
