How to make
Remove the eyes and tongue from the lamb head. Blanch it in boiling, salted water for 10 min. Boil the tongue for 30 min., peel it and put it back in the lamb head.
Mix all the other ingredients together and marinate the lamb head in them - leave in a cool area for about 2 hours.
Transfer the marinated head to a suitable oven dish and bake 90-110 min. in a preheated 320°F (160 °C) oven.
Serve the dish on a bed of fresh parsley, with a garnish of your choice.
