Ingredients

  • leg of lamb - 1 pc around 4.4 lb (2 kg)
  • paprika - 1 tbsp
  • salt - 1 tbsp
  • fresh rosemary - 4 stalks
  • fresh spearmint - 4 staks
  • fresh costmary - 4 stalks
  • estragon - 2 - 3 pinches
  • butter - 3.5 oz (100 g)
  • red wine - 2 cups

How to make

Wash the leg of lamb, pat it dry and remove the long bone, keep the bone that is under the meat.

Place the meat in a baking tray that it lagre enough to fit it all, rub all its sides with the salt and paprika, pour in the wine, arrange the herbs ot top and along the sides, and marinate it in the gridge for a few hours, covered with cling film.

Remove the cling film, pour in 3 cups of water, place the piece of butter on top, cover with tin foil and bake in a preheated oven at 390°F (200 degrees) for 1 hour.

Decrease th temperature to 320°F (160 degrees) and cook for 2 more hours. Periodically scoop the juices from the bottom of the tray and pour them over te meat.

Finally, remove the tin foil and bake using the upper heat element to achieve a golden brown crust.

Serve with a garnish of your choice.
