How to make
In a pot with boiling salted water, pour the vegetables - peeled and chopped onion, carrot and garlic.
When they boil, add the red lentils, which have been washed several times in advance. Boil them without covering the pot with a lid, so that the excess water evaporates and they thicken.
Stir and shortly before they are fully cooked, add parsley (finely chopped) and the spices.
As soon as the mixture for the croquettes is ready and cools down a bit, pour it into a blender and grind it just a little - it's best if it's coarsely grinded. You can also do it with a liquidizer instead of a blender.
Thicken the mixture with fine oats and leave it for at least 15 minutes, or more, to set slightly.
Then form oblong croquettes, roll them in breadcrumbs (wholemeal breadcrumbs) or semolina.
Arrange the lentil croquettes on a tray lined with baking paper, drizzle them with sunflower oil and bake them at 390°F (200°C), until they aquire a golden color.
Serve the spicy red lentil croquettes warm and crispy with your favorite sauce or vegetable spread.
