Healthy Red Lentil Soup - delicious, nutritious and vegan lentils.
Pour 8 cups (2 liters) of water into a pot, put it on the stove to boil.
Pour the oil and as much water into a pan. Put it on the stove and after it boils, add the finely chopped onion and grated carrots and stew, until the vegetable soften.
Add the sliced leeks and continue stewing, until they soften.
In the pot of boiling water, add the stewed vegetable, pre-washed red lentils with cold water and strained, add as much salt as you like and simmer on low heat for 15 minutes.
The lentils in the finished soup should be soft!
Serve the lentil soup while it is still warm.
