How to make
Pour boiling water over the bulgur and set it aside for about 30 minutes.
Peel an onion, finely chop it and fry it in a large pot with olive oil.
Finely chop the carrot and add it into the pot along with the flour, paprika and tomato puree.
Pour a liter and a half of the hot broth and add the crushed dried peppers.
After a few minutes, add the bulgur and spices.
Leave the vegetable soup to simmer over low heat for about 20 minutes.
Cut the celery leaves and add them into the soup, after you have removed the soup from the heat.
Serve it while it is still hot and if desired, with coarsely crushed hot paprika.
