How to make
Transfer the red lentils into a sieve and wash them well under cold running water. Let them drain from the water.
In a suitable deep pot, heat the oil and butter, add finely chopped onions, carrots and red pepper. Sprinkle with a pinch of salt and let the vegetables stew and soften. Then add the paprika, tomato puree and the chopped garlic cloves.
Season with salt and black pepper and add the cumin, bay leaves, nutmeg and thyme.
Pour about 1.5 liters of hot water and let everything boil well. Pour the delicious lentils in, stir and boil on a moderate heat for another 15 - 20 minutes.
Remove the pot from the heat and cover it with the lid. Allow the lentil stew to simmer for 15 minutes before serving.
Serve the red lentil stew with vegetables sprinkled with finely chopped fresh parsley.
