Ingredients

  • red lentils - 7 oz (200 g)
  • rice - 1.8 oz (50 g)
  • bulgur - 1.8 oz (50 g)
  • potato - 1 medium - sized pc.
  • water - 5 cups (1200 ml)
  • olive oil - 4 tbsp.
  • onion - 1 onion
  • carrot - 1 pc.
  • garlic - 2 cloves
  • tomato puree - 1 tbsp.
  • paprika - 1 tsp.
  • black pepper
  • salt
  • dried mint - 1 tsp.
  • chili (for sprinkling)

How to make

Wash and strain the lentils, rice and bulgur. Put them to boil in the water.

Boil for about 15 minutes, meanwhile peel and grate the potato and add it to the lentils. Boil for another 15 minutes or until the potato softens.

During this time, finely chop the onion and carrot. Heat the olive oil and fry them, until they soften. Add the finely chopped garlic, tomato puree, paprika, black pepper, parsley and season with salt.

Stir well and cook for 2-3 min. Add 1 scoop of the lentil soup and stir well.

Pour the mixture into the pot with the soup. Mix well and leave it to boil for another 10 minutes on low heat.

If you want the soup to be more liquid, add more water. When serving, pour a little hot chili over the soup if you like.
