Ingredients

  • einkorn flour - 5.3 oz (150 g)
  • eggs - 2 pcs.
  • olive oil - 4 tbsp (60 ml)
  • pumpkin seeds - 4 tbsp (60 g)
  • poppy seeds - 4 tbsp (60 g)
  • flaxseed - 2 tbsp (30 g)
  • sesame seeds - 2 tbsp (30 g)
  • caraway - by taste
  • baking soda - 1/2 tsp.
  • dried basil - by taste
  • black pepper - by taste
  • hot pepper - by taste

How to make

Beat the eggs with olive oil, baking soda and a pinch of salt into a frothy mixture.

Add the einkorn flour in portions, while stirring constantly.

Pour the flaxseed, poppy seeds and sesame seeds directly into the mixture.

Crush the pumpkin seeds with a wooden mallet and then add them.

Season the dough with spices of your choice and knead it well.

If the dough is dry, add more water to make it soft.

Roll it out into about half a centimeter thick crust and cut the homemade crackers into rectangular sticks.

Arrange them in a baking pan onto baking paper and spread them with the beaten egg white.

If desired, sprinkle them with more crushed seeds.

Bake the homemade crackers with einkorn and seeds in a preheated oven at 360°F (180°C) until they're ready.
