"Lemon cookies with ginger, which have a fresh aroma"

Ingredients

  • eggs - 2 pcs.
  • melted lard - 100 ml
  • yogurt - 3 tbsp.
  • baking soda - 1/2 tsp.
  • baking powder - 1/2 package
  • ginger - 1 level top tsp.
  • oil - 2 tbsp.
  • einkorn - 200 g
  • white flour - 500 g
  • yolks - 1 for spreading
  • sugar - for sprinkling
  • lemon peel - 1 tbsp.
  • lemon juice - 2 tbsp.

How to make

Beat the eggs with the sugar. I did it with a wire whisk.

Add the melted lard, yogurt with the soda (mixed in it), oil, lemon peel, activated baking powder in lemon juice.

Mix the products and add the ginger and knead a medium soft dough with both types of flour.

Shape about 20 elongated cookies, depending on what size you want them to be.

Arrange them on paper or a silicone pad and spread them with beaten egg yolk on top and sprinkle them with granulated sugar.

Bake the popular cookies in a preheated oven at 180°C, until they aquire a golden color.
