Molds, made from Teflon, are very easy to wash. However, Teflon also has drawbacks. The most important disadvantage, is that it scratches very quickly and over time loses its non-stick properties. The more important drawback, however, is that these molds should not be heated above 390°F (200°C).

The molds from fireproof glass and ceramics are one of the most suitable molds for making fruit cakes and pastries. The reason is that they are heated evenly and this reduces the risk of those desserts, which are baked slower, to burn on the outside and remain sticky on the inside. These molds have another advantage and that is, that thanks to the fact that they are made of glass, you can observe the baking process.
