Not every housewife can bake an airy fluffy sponge cake, but it is not difficult at all, as long as you know some secrets for making this delicious dessert.
You'll need five eggs, a cup of sugar, a cup of flour, a pinch of baking soda and baking paper.
The first secret for the sponge cake is that the eggs for the dough should be well chilled. Therefore, before preparing the dough, leave them in the freezer for ten minutes.
The eggs are beaten in a very deep bowl, so they do not splash out of the container. Beat with a mixer at maximum power until they turn into a yellow foam.
When beating the eggs, you should tilt the bowl slightly to one side and hold the mixer so that it only touches the surface of the eggs without going in too deep.
Add the sugar in small portions, while stirring constantly with a mixer. Then turn off the mixer and add the flour, while stirring gently with a spoon.
Add a pinch of baking soda. The dough is now ready. Prepare the cake baking pan. It is best if you can disassemble it. Cover the bottom of the cake pan with rice paper or baking paper and sprinkle it with flour.
In a 480°F (250°C), preheated oven, place the cake pan in which you have slowly and carefully poured in the whole dough. Do not open the oven door while the cake is baking.
If you open it even once, the sponge cake won't be as fluffy and won't rise. A baking cake pan with a diameter of twenty-five centimeters, the baking time of the cake is forty-five minutes.
The fully baked sponge cake needs to be removed from the oven, left to cool in the cake pan without being removed. Only when the sponge cake has completely cooled down, it can be removed from the pan, otherwise it may crumble. Sprinkle it with powdered sugar and serve it, cut into pieces.
