In a bowl, beat the egg, add the cottage cheese, oil, baking powder, lemonade, vanilla, oil, stevia and rice flour.
Stir and pour 2/3 of the mixture into a Teflon cake pan.
Add the cinnamon, cocoa and coffee to the rest of the mixture.
Stir and with a spoon distribute this mixture in the middle of the white mixture, lengthwise, to make a two-color sponge cake.
Bake the two-color sponge cake for diabetics at 390°F (200 degrees) for 25 minutes.
