Beat the eggs with the milk and a little salt. Pour this mixture into a pan with a nonstick coating. While it's frying on the bottom side, close the pan with a lid so it hardens and so you don't have to flip it over.
The omelette will be ready after 2-3 min. Transfer it to an oven dish covered with baking paper. Smear the omelette with chutney and arrange the chopped vegetables and mozzarella on top.
Sprinkle with oregano and grated cheese. Bake in the oven for a few min. until the cheese melts and gets an appetizing crisp.
