How to make
Blanch the cauliflower for about 10 minutes in boiling salted water. Strain and grind it in a chopper.
Strain it from the liquid again and transfer it into a bowl.
Mash the almonds and pour them over the cauliflower along with salt, white pepper and savory herb. Add the beaten egg and stir the mixture.
Refrigerate for about 30 minutes.
Then grab a 24 cm diameter baking pan and line it with baking paper. Pour the mixture inside and flatten it to make a base.
Heat the oven to 180°C and bake the cauliflower base for 25 minutes. Take it out and garnish it.
Mix the pesto with the puree of peppers and olive oil. Spread the base with it and sprinkle it with finely chopped garlic, chopped olives and cherry tomatoes.
Shred the mozzarella and sprinkle it over the keto pizza.
Place it back into the oven for a few more minutes to melt the mozzarella. Finally, sprinkle with parsley and serve it while it's warm.
