How to make
First prepare the pizza dough by activating the yeast and dissolving the sugar in warm water, but not hot (37°C). Let it activate.
Sift the flour into a bowl. Add the salt to it. Make a well in the middle, pour the yeast, olive oil and spinach, finely chopped.
Knead the dough, put it in a bowl or other container and cover with a towel. Set aside for 40 minutes to rise.
Prepare the filling for the delicious vegetarian pizza by peeling the tomatoes and grinding them with the garlic clove.
Pour them into a heated pan along with the basil and salt. Cook the tomato pizza sauce for 15 min until it has thickened.
Then roll out the dough into a thin crust into the shape you prefer your spinach pizza to be. Set aside for 15 min.
In salted and boiling water, blanch the spinach for a few minutes. Then chop it into small pieces. Spread the pizza crust first with the tomato sauce, then add the cream, oregano, a mix of the selected cheeses and then spread the spinach.
Bake in a pizza tray in a moderate 360°F (180°C) oven for 15 min or until the dough forms a crust. Remove, crack the eggs on top, season with a little sauce and place it back into the oven.
