How to make
Wash the cauliflower under running water, which has been chopped into small pieces and place it in a baking pan greased with olive oil. Drizzle some more olive oil, season with salt on top and bake at 180 degrees in a preheated oven. You can boil it, but it would dilute it further.
Once the cauliflower has cooled, place it in a convenient bowl along with all the other products for the base. Initially add about 7 tbsp. of flour and blend everything. Gradually add a little flour, until a thick mixture is obtained.
Spread the mixture in a thin layer in a baking pan onto baking paper, by giving it the desired shape - round or rectangular. Bake the base in a preheated oven at 360°F (180°C), until a golden color is obtained.
While it is still hot, spread it with mascarpone, which will melt like butter and the base will soak it up and make it soft and juicy.
Spread the tomato sauce on top, sprinkle with oregano and arrange the mozzarella, which is cut into circles.
Place it back into the oven, until the cheese has melted and take it out of the oven.
Leave the pizza for a few minutes and then flavor it and decorate it with fresh basil leaves (if we add them, while it is very hot, they will darken immediately and our pizza will not look that great).
