How to make
The flours are sifted into a bowl. A well is made, in which the slightly warmed water and olive oil are poured. The sugar and yeast are dissolved in the liquid. Stir and add the salt at the end.
Knead a smooth and elastic dough, which is formed into a ball and left in a greased bowl, in order to rise for 1 hour.
Divide the dough into two equal parts and spread each one out with your fingers onto baking paper in two trays. The spreading is done with the pressure of the fingers from the middle to the edges, until a round thin crust is formed.
Spread butter on our sweet pizza crusts, sprinkle them with brown sugar, leave them to rest for 5 minutes and bake them in a preheated oven at 450°F (230 degrees).
During this time, beat the mascarpone with powdered sugar, 2-3 tbsp. lemon juice and the peel of 1 lemon, grated on a very fine citrus grater.
Remove the crusts from the oven after 5 minutes and spread them with the mascarpone cream. Distribute the fresh blueberries on top.
Put the pizzas back in the oven (together or separately, depending on your oven) and bake them for 8-10 minutes at the same temperature. The blueberries need to crack.
Serve the baked sweet pizzas with mascarpone and blueberries, while they are still warm.
