Spread the kadaif in a thin layer onto a baking tray lined with baking paper. If desired, you can drizzle with a little melted butter, but it will bake wonderfully without it.
Place in a preheated oven at 300°F (150°C) and bake until golden, making sure to check and stir, if necessary to achieve an even browning.
Let it cool down and pour into a bowl with the pistachio cream. Stir well and pour it into a cake tin with a detachable ring (it is also good to have it lined with baking paper).
Press to obtain a compact and even crust for the base of our cake. If the kadaif is dry, then we can add a little soft butter so that it can stick together better.
For the cheesecake cream, beat the cream and mascarpone, and it is important that they are at the same temperature so that the cream does not lump up. An option is to beat the cream separately and then mix it with the mascarpone (soft, at room temperature), but this is riskier.
Melt the white chocolate in a water bath and carefully add it in parts to the white cream along with the pistachio cream. The stirring should be done smoothly using a silicone spatula. Taste it to check how sweet it is and if you are fans of very sweet desserts, add powdered sugar to taste.
Pour the cream on the crunchy kadaif base and level it. In this case, I did the following: I added half of the cheese cream, spread a little extra pistachio cream and covered with the remaining cheese cream.
For the ganache, heat the cream and grate the dark chocolate into it. It can be in pieces, but if it is grated, it will melt immediately.
Stir with a spatula and after a a smooth and shiny mixture is obtained, pour it into the middle of the cake and distribute it with a spatula over the entire surface.
Let it set and decorate with crushed pistachio nuts. The decoration can also be added immediately before serving.
It is good for the cheesecake with mascarpone and pistachios to be left in the refrigerator for at least 3-4 hours before cutting and serving it.
