Ingredients

  • tuna - 7 oz (200 g) from a tin
  • eggs - 2 pcs.
  • yellow cheese - about 2.8 oz (80 g)
  • zucchini - 1/2 pc. green
  • onion - 1/2 small or medium - sized onion
  • tomatoes - 7 oz (200 g) fresh or canned
  • garlic - 1 - 2 cloves
  • salt - 1 pinch or to taste
  • oregano - 1 and 1/2 tsp.
  • black pepper - 2 pinches, freshly ground
  • oil - 1 tsp. to grease the mold

How to make

Pizza with tuna crust - the perfect flourless pizza.

Put the well-strained tuna in a blender along with the eggs, a pinch of salt, a spoonful of dried oregano and two pinches of black pepper. Blend on medium speed and spread the resulting thick mixture in a greased baking pan, by smoothing it out well with the back of a spoon. You can make one large round pizza crust or two smaller ones.

You can also bake onto baking paper or in a silicone mold without any fat.

Place in a 430°F (220°C) oven for 15 minutes or until golden brown.

Meanwhile, finely chop the onion and garlic. Grate the tomato and put everything in the saucepan on the heat. The idea is that there should be no fat in the sauce and that it should be boiled, not fried, that's why we don't add oil. Season with salt, oregano or herbs de Provence and cook until thickened, about 5-6 minutes.

Cut the zucchini into very thin crescents.

When the pizza crust is ready, remove it from the oven and spread it with the tomato sauce, arrange the zucchini on top and grate the yellow cheese.

Bake until the cheese has melted and lightly browned. The zucchini are very thin and soften slightly, but the idea is to keep them fresh (use young and crunchy green zucchini).
