Ingredients

  • zucchini - 1 pc. (medium - sized)
  • eggs - 1 pc.
  • salt - by taste
  • garlic - 1 clove
  • yellow cheese - 2 tbsp. (grated)
  • ground flaxseed flour - 1 tbsp.
  • buckwheat flour - 1 tbsp.
  • garnish
  • tomatoes - 1 pc.
  • green peppers - 3 slices
  • oregano
  • mozzarella - 1.8 oz (50 g)
  • yellow cheese - 1.76 oz (50 g) (grated)

How to make

The washed zucchini is coarsely grated, it is sprinkled with salt and left for 10 minutes. Drain in a bowl, add the egg, black pepper, finely chopped garlic clove, ground flaxseed, buckwheat flour and grated yellow cheese.

Mix well and pour the mixture onto baking paper, which has been lightly greased with oil, in a small baking pan - 70°F (20 cm). Form the base with a spoon.

Bake in a preheated oven at 360°F (180°C) for 12-15 minutes, until it is lightly browned and remove it from the baking pan.

Arrange tomato rings, pieces of green pepper and mozzarella on top and sprinkle with dried oregano.

Cover the pizza with grated yellow cheese and place it back into the oven to bake for 7-8 minutes on top, until the yellow cheese has melted. Take it out and place it onto a wire rack to cool.

Carefully separate it from the paper by passing a knife between the pizza base and the paper.

Serve it on a plate with fresh basil leaves. Perfect for summer and delicious, without any flour!
