  • beef tripe - 1.1 lb (500 g)
  • salt - 1 tsp.
  • white pepper - 1 tsp.
  • cayenne pepper - 1/2 tsp. dry, flaky
  • cumin - 1/2 tsp.
  • butter - 1.8 oz (50 g)
  • garlic - 2 cloves
  • parsley - fresh

How to make

The tripe is boiled until done, strain and save the broth. Cut it into small pieces. Crush the garlic to a pulp.

Heat the oil in a pan, add the garlic, salt and spices, pour the tripe and pour 2-3 ladles of the broth.
