How to make
The boiled sweet potato is strained very well from the water and pureed. Of course it can be steamed.
Beat the two eggs with a spoonful of sugar. Add the cottage cheese and sweet potato puree. Mix well and add all other ingredients. Personally, I added some dried fruit and pumpkin seeds.
The sugar is only 1 tbsp., since the protein I had is sweetened and flavored.
If you're using unflavored and unsweetened protein, you can increase the sugar or replace it with a healthier option.
After mixing well, spread the dough in a thin layer onto baking paper.
Bake for about 20-25 minutes at 360°F (180°C). I personally preferred them to be slightly crispier, so I kept them in the oven longer.
I also sprinkled the healthy bars with some cornflakes on top.
After removing from the oven, I cut into 20 rectangles of High Protein Sweet Potato Bars.
