Ingredients

  • filo pastry sheets - 9 oz (250 g)
  • roasted pumpkin - 10.5 oz (300 g)
  • protein - 1.1 oz (30 g) with a flavor of your choice
  • coconut sugar - 0.9 oz (25 g) + more to taste + more for sprinkling
  • butter - 0.9 oz (25 g) + another 0.2 oz (5 g) for spreading
  • walnuts - 1.1 oz (30 g)
  • cinnamon - 0.2 oz (5 g)

How to make

Mash the pumpkin in a bowl, add the protein, sugar, butter, cinnamon and chopped walnuts.

Stir well until a homogeneous mixture is obtained.

We spread the mixture on 3 filo pastry sheets (or 2 depending on the thickness) and roll them up.

We repeat this until we run out of the mixture and then we arrange the pumpkin rolls in a greased baking pan.

Spread each roll with butter and sprinkle with sugar.

Bake the tikvenik in a preheated oven at 360°F (180°C) until done.
