How to make
Divide the meat into portions and stew in the oil, then add salt, sprinkle it with paprika and remove it. In the same oil, stew the core of the sauerkraut (that has been cut very finely) for a few minutes, then remove it from the heat.
The outer leaves of the sauerkraut are cleaned of any hard parts and parboiled in boiling water. In each leaf, wrap one piece of meat. Arrange them in a pot over the stewed sauerkraut, cover with a plate.
Add hot water and boil on low heat until mostly just oil remains. Place 1 dolma in each dish and sauerkraut all around it.
