How to make
Soak the beans in water overnight. The next day, strain them, pour fresh water and boil them for about an hour and a half. The time is approximate, because it depends on how old it is.
It is best to try it yourself and when it is tender enough, remove the beans from the heat and strain them from the water, by only leaving just a little. You can use canned beans as well.
Chop the fresh vegetables and stew them in the oil, until they're done, along with two pinches of salt. Finely chop the dry pepper. Add the tomato paste with 2/5 cup (100 ml) of water and as soon as it boils add the sausages and cover with a lid. After about 3-4 minutes, turn them over and cook them on the other side for the same amount of time. The heat should be moderate.
Add the beans, season with the spices and more salt, if needed. Transfer them into a clay pot and add as much water as you would like the thickness of the dish to be.
Place it in an oven preheated to 390°F (200°C) and bake for about 10-15 minutes, until the sausages are nicely browned.
Serve the dish while it's hot with a good salad or pickled vegetables, as well as hot peppers for the lovers of spicy food.
