How to make
Grate the pumpkin and apple into a bowl and sprinkle with granulated sugar. Leave it for 5-10 minutes to release a little juice.
Pour almost all of the oil and stir the pumpkin stuffing. With the remaining oil, grease the bottom and sides of a round baking pan with a diameter of 28 cm.
Spread the filo pastry sheets on a slightly damp cloth to prevent them from drying out. Spread evenly from the stuffing and roll them up two at a time.
Arrange them in a snail shape in the baking pan and if desired spread them with oil on top if you have any left over.
Bake the pumpkin without walnuts at 360°F (180°C) in a preheated oven for about 30 minutes or until golden brown.
When cool, sprinkle generously with powdered sugar.
It's a classic tikvenik, everyone's favorite and even though it lacks walnuts, it's wonderful.
You can always add something from you, for example some raisins or cinnamon, sliced almonds or other nuts.
