Ingredients

  • pumpkin - 3 lb (1.4 kg)
  • butter - 4.4 oz (125 g)
  • walnuts - 1 cup
  • plain biscuits - 12 - 14 pcs.
  • sugar - 7 tbsp.
  • cinnamon - 1 tsp
  • filo pastry sheets - 1.1 lb (500 g)
  • for the syrup
  • sugar - 0.9 lb (400 g)
  • water - 1 2/3 cups (400 ml)
  • lemon juice - 1 tbsp.
  • vanilla essence - 1 tsp.

How to make

A simple but very tasty tikvenik with syrup - a favorite tikvenik recipe.

The pumpkin is grated on a coarse grater and stewed until slightly softened. Add the cinnamon and let it cool.

Walnuts are coarsely grinded.

The biscuits for the cake are also grinded.

The butter is melted.

One filo pastry sheet is taken, it is smeared with butter using a brush. Another filo pastry sheets is placed on it. Distribute part of the pumpkin, walnuts, biscuits and a tablespoon of sugar. The filo pastry sheets are rolled up and placed in a baking tray.

This way, seven tikvenik rolls are prepared.

Spread the rest of the butter on top of the rolls.

The rolls are cut crosswise into four.

The pumpkin is baked in a preheated oven at 180°C until golden.

For the syrup: water is mixed with sugar and boiled for about 4-5 minutes.

Add the lemon juice and vanilla.

The tikvenik with walnuts is poured with the warm (not hot) syrup when it has cooled.

Let the syrup soak in and you can enjoy an uniquely delicious syrupy tikvenik with walnuts and plain biscuits.
