Heat water on high heat with the salt and butter. Add the flour all at once and stir vigorously with a wooden spoon until the dough begins to come off of the pot and spoon. Remove from the heat and start adding the eggs one at a time while stirring.
Finally, add the 5.5 oz (150 g) grated cheese, salt and pepper. Grease a baking pan with butter and form medium sized balls, shape them with your hands, pressing them.
Put the pitas to bake for 30 minutes in a moderate oven, and right before they are ready, sprinkle each of them lightly with cheese.
