How to make
Dissolve the yeast in 1 cup warm water with a little sugar, and mix the remaining water with the powdered dry milk. Once the yeast is activated, pour it into the sifted flour.
Add the remaining sugar, salt, baking soda extinguished in vinegar and with the water-milk mixture and oil, gradually knead a smooth and homogeneous dough.
Cover it with a cloth and let it rise. Then tear off pieces the size of your palm and shape them into elliptical pitas. Preheat a grill pan and grease it. Grill the pitas on both sides.
You will get very fluffy pitas. The dough is suitable for frying fritters too.
