How to make
Dissolve the yeast in 2/5 cup (100 ml) of lukewarm water with 1/2 tsp sugar and leave it in a warm place to process. Pour it into a well in the center of the sifted flour, add the yoghurt with baking soda dissolved in it, the remaining salt, sugar, oil and egg. Gradually knead a smooth dough.
Put it in an oiled bowl, cover it with a cloth and leave it in a warm place to rise. Then transfer the dough to a floured surface, tear balls out and form them with your hands into tortillas, as you stretch them out. Cover these pitas with a towel to rise.
Bake them on a greased grill on both sides. Brush each ready Gabrovo-style pita with oil and sprinkle with mixed spices or with olive oil, mixed with mashed garlic.
