Ingredients

  • yoghurt - 2 cups (500 g)
  • oil - 1 tbsp
  • baking soda - 1 tsp
  • flour - about 4 cups
  • salt - 1 tbsp
  • sugar - 1 tsp
  • butter - 2 - 3 tbsp for frying + 1 tbsp for smearing
  • mixed spices
  • sesame seeds - for sprinkling

How to make

Sift the flour in a deep bowl. Add 1 tsp baking soda to the yoghurt and stir well until it bubbles.

Add 1 tsp salt to it and gradually add in the flour. Once it becomes difficult to stir with a spoon, pour out the dough onto a floured counter and knead, while sprinkling with a little flour periodically, so it doesn't stick.

Knead until it stops sticking. The dough needs to be soft. Press it with your finger during the kneading process - once it rises back up it means it's ready.

Once it is ready, rip it into balls, stretch out each ball with oiled hands and fry in highly heated butter and 1 tbsp oil (during wintertime you can fry them in lard - they turn out divine).

Smear the ready pitas with butter while they're still hot and sprinkle with sesame seeds and mixed spices.
