How to make
Put the flour in a bowl in a heap and add the hot water to it spoon by spoon. Knead a tough dough, which is covered with a towel and left to stand for 30 minutes. Then roll it out into a very thin sheet (1/32).
Smear it lightly with melted lard, fold it in 2 and roll it out again. Smear with lard again, fold it, etc. This procedure is repeated a total of 5 times.
Then the dough is rolled out and round pitas are cut out from it using a glass. Arrange them in a greased baking tray, coat them with beaten egg and sprinkle with chopped peanuts or sesame seeds.
Bake in a very hot oven until golden brown. Serve as a side to a meat broth.
