How to make
Mix the milk - slightly warmed, the yeast, the sugar and 5.3 oz (150 g) of the flour in a bowl. Cover the resulting mixture with a towel and leave it to activate for 10-15 minutes.
Sift the rest of the flour into the activated mixture, pour the spoons of salt, parmesan, olive oil and spices.
Knead a smooth elastic dough and let it rise in a warm place for 40 minutes, then knead again.
Form three identical elongated strips from the risen dough and cut each of them into about 15-18 pieces.
Grease or line a 1 liter bread tin or a rectangular sponge cake tin with baking paper.
Make the dough pieces from the first strip into balls - they don't have to be exactly the same size, nor do they have to be perfectly shaped. Arrange them on the bottom of the baking pan, by leaving some space. Spread them with melted butter and sprinkle with some grated cheese.
From the second strip, also form balls and arrange them on top of the others - grease them with butter and sprinkle generously with cheese. Finish off by arranging a third layer of balls from the last strip and grease them with butter only. Save the rest of the cheese.
Let the shaped bread rise in a warm place for 40 minutes - 1 hour. You can also put it in an oven heated to 100°F (40°C).
Bake the bread for about 35 minutes in an oven preheated to 360°F (180°C). If you notice it starting to brown too much, cover it with aluminum foil.
Sprinkle the baked bread with the rest of the cheese and put it back in the oven for 2-3 minutes to melt.
Serve the golden cheese bread warm in the center of your table so that everyone at the table can take a bite of the fluffy cheesy balls with a slightly crispy crust.
