Slightly spicy fish sauce

Ingredients: 1 lemon, 1 orange, 1 tsp. dry mustard, 6 drops of Tabasco sauce or a pinch of cayenne pepper, a pinch of salt, 2/5 cup (100 ml) of porto wine, 4 oz (115 g) of blackcurrant jelly.

Preparation: Peel half of the lemon and orange peel and grate them finely. Blanch them in boiling water for about 5 minutes, then strain them, cool them with cold water and strain them again.

Squeeze the lemon and orange juice into a small bowl. Add the mustard, Tabasco sauce (or cayenne pepper), salt and stir for about a minute or two. Add the porto wine and jelly to the mixture. Leave the mixture to boil for about 5 minutes - until the jelly is dissolved. Strain the sauce and add the lemon and orange peels towards the end. The sauce can be served hot or cold.

Cream sauce for fish

Canary fish sauce

Ingredients: 1 ripe avocado, 4 cloves of garlic, 1 tbsp. of lemon juice, 2 egg yolks, 2/5 cup (100 ml) of olive oil, salt, ground black pepper, a pinch of sugar, a pinch of cayenne pepper (optional)

Preparation: Peel an avocado and cut it into cubes. The garlic should also be peeled. Blend all of the products with a blender or liquidizer, until a creamy mixture is obtained.

Skordalia garlic sauce

Necessary products: 8 cloves of garlic, 9 oz (250 g) of breadcrumbs, 4 fl oz (120 ml) of olive oil, 2.4 fl oz (70 ml) of wine vinegar, 1 teaspoon of salt.

Preparation: Press the garlic and add the salt and breadcrumbs. Stir, until a thick paste is obtained. Add olive oil and vinegar very slowly, while stirring at all times. Blend.

Fish fillet in white sauce

Béchamel sauce

Necessary products: 3 tbsp. of flour, 3-4 tbsp. of oil, 3 tsp. of milk and as much salt as you like.

Preparation: Prepare a light mixture of flour and oil, then dilute it with milk, by stirring quickly and continuously, until a smooth sauce is obtained. Add salt to the sauce and leave it to simmer for about 7 minutes. If you want, you can season it with 2 egg yolks.
