Ingredients: 14 oz gluten-free ginger cookies, 3 lemons, 3 egg yolks, 1 4/5 cups sweetened condensed milk, 2/5 cup melted butter, 1 vanilla, 5 tbsp brown sugar, 2 tbsp white sugar.

Preparation: Make a dough from the crumbled cookies and butter, cover the bottom of a cookie tray with it. With a mixer beat the grated lemon rinds and their juice (save a few lemon slices for decoration), the egg yolks, vanilla and sugar. Once the mixture begins to bubble, add the milk. Pour this mixture over the dough and bake in a preheated 360°F (180 °C) oven. Once the pie is ready, decorate it with the lemon slices rolled in the sugar.

Ingredients: 2 1/2 cups buckwheat flour, 1 egg yolk, 1/2 cup butter, 3 pears, 1 tsp lemon juice, 3 tbsp powdered sugar.

Preparation: Peel the pears, remove the seeds and blend them with the lemon juice and egg yolk. In a bowl mix the flour and butter, mash them with your fingers, add the powdered sugar and pear mixture. Stir everything well and leave the dough in the fridge for 1 hour. Once ready, roll it out flat and using cookie cutter shapes cut out cookies, bake them until pink in a preheated 360°F (180 °C) oven.
