Ginger marinade is very suitable for duck meat, it makes it tender and aromatic. Ingredients required: 1 centimeter piece ginger root, 1 spring onion, finely chopped, 1 teaspoon salt, 2 tablespoons water, 1 tablespoon white wine.

All the ingredients are mixed, and the ginger is grated beforehand. The meat is left for 2 hours in the refrigerator. After removing from the marinade, dry well.

The Pineapple Marinade makes the duck meat very tender and with an exquisite exotic aroma. Ingredients: 150 grams of canned pineapple, 6 tablespoons of soy sauce, 1 tablespoon of brown sugar, 6 cloves of garlic, 2 teaspoons of grated ginger root, a quarter teaspoon of cayenne pepper, ground black pepper and salt to taste.

All the ingredients are mixed and the meat is left to marinate for half an hour. The meat is then removed and dried before cooking.
