Ingredients

  • pork - 28 oz (800 g) fillet
  • nuts - 3.5 oz (100 g)
  • quinces - one large
  • wine - 3.5 fl oz (100 ml)
  • butter - 3 oz (80 g)
  • oil - 2 fl oz (60 ml)
  • black pepper
  • salt - 1 2/3 tsp (8 g)

How to make

The pork fillet is cleaned of membranes and forms a nice piece. Salt well and sprinkle with pepper.

Heat some oil and fry it on all sides to seal.

In the same fat, fry the nuts for a short while, remove them and sauté the peeled and chopped quince.

The meat is placed in a baking dish, spread the walnuts and quince around it.

Soak with wine, sprinkle again with salt and pepper and bake under foil for about 90 minutes in a hot oven, but the length of time depends on the thickness of the meat.

Serve the pork fillet with a sprig of parsley.
