"It`s lamb season and as such we recommend that you make this amazing soup with lamb offal."

Ingredients

  • lamb - 23 oz (650 g), offal
  • onions - 1 - 2 heads (or a bunch of green onions)
  • vermicelli
  • carrots - 2
  • salt
  • black pepper
  • parsley
  • spearmint
  • eggs - 1
  • yoghurt - 1/2 cup

How to make

Boil the lamb offal and chop them finely. Return them to the broth.

Add the finely chopped onions, carrots and parsley. Boil until the onions and vermicelli are cooked.

Season with salt, black pepper and spearmint to taste. Once the soup's ready, thicken it with egg and yoghurt.
