How to make
Parboil the offal in boiling water. Chop them finely, then boil in salted water.
Chop the onions finely and saute them in the butter. Add the paprika and pour into the mixture with the offal.
Boil the salted soup for another 10 min.
To make the thickening agent, beat the egg, add it to a little of the broth and pour this back into the main soup.
Sprinkle parsley and spearmint over the prepared soup.
