How to make
Boil the lamb offal until done. Take them out and finely chop them.
Fry the finely chopped onions, carrots and garlic in a little fat. When they are soft, add the lamb offal. Season with paprika and ginger, add salt to taste and leave them for another 2-3 minutes on a low fire.
Pour the broth from the offal over the products and cook on low heat for about 15 minutes. Add the noodles and cook for another 7-8 minutes.
Boil the lamb soup until the noodles are cooked and thicken with two eggs, beaten and passed through a slotted spoon or strainer.
Before serving, sprinkle the lamb offal soup with finely chopped parsley.
