"Fairy ring mushrooms with rice and thyme - a very tasty lean dish with rice. It can also be served as a side dish."

Ingredients

  • fairy ring mushrooms - 1.8 lb (800 g)
  • rice - 2 cups
  • carrots - 2 pcs.
  • spring onions - 1 bunch
  • thyme - 1 tsp.
  • fresh spearmint - 3 stalks
  • salt - 1 tsp.
  • oil - 3 1/3 tbsp (50 ml)

How to make

The carrots are washed, peeled and cut into cubes.

The onion is cleaned, washed and finely chopped.

Place the carrots and onions in a wok pan, add the oil and stew over medium heat for 10 minutes.

Wash the mushrooms very carefully so they don't break.

After the vegetables are stewed, the fairy ring mushrooms are added.

Mix very well and fry for 10 minutes.

The rice for the dish is washed, until the water clears up.

After the mushrooms are fried, add the rice.

Stir and fry for 5 minutes, then remove from the heat.

Wash and finely chop the fresh spearmint.

Salt, black pepper and thyme are added to the mixture in the pan.

Mix very well and pour into a non-stick baking pan.

It is poured with 3 cups of warm water and stirred.

Bake rice in the oven on with the lower heating resistor on at 430°F (220°C) and after boiling it is switched off and left in the oven for 30 minutes.

Fairy ring mushrooms with rice and thyme - very tasty vegan rice. It can be eaten as it is or as a rice side dish.
