How to make
The quinces are washed and carved out. The carved out part is mixed with the soaked and squeezed bread, finely chopped onion, mustard and as much black pepper and salt as you like.
The filling is distributed in the carved out quinces and a piece of butter is placed on top.
The fruit are arranged in a baking pan, filled halfway with the broth and baked in a moderately heated oven, until they soften.
They are carefully removed and the sauce is mixed with flour and yolk, season with lemon juice, sugar and as much salt as you like and boil for a few minutes.
The quinces are poured with the sauce and served with a side dish of boiled potatoes with butter.
