How to make
Clean the quinces and cut them into pieces. Put the cleaned and washed quinces in water with a little lemon juice so they don't darken.
Stick 1-2 cloves in each piece. Arrange the quinces in an oven dish with about 1 finger width of water in it and sprinkle generously with sugar and a little cinnamon if desired. Stir carefully.
Put them to bake in a moderately heated oven. Once the water comes to a boil, lower the heat and finish baking.
