How to cook
Carefully wash the quinces. Cut four of the fruits into 6 pieces. Clean from the stems and seeds. Roll the pieces in sugar and arrange them in a tray. Sprinkle them with the spices.
The last quince is cut into small cubes, it is mixed with the seeds of the other quinces and the rest of the sugar. Pour the products with 1 cup of water. Boil them for about 5-6 minutes over moderate heat.
