How to make
Put the cauliflower to boil. When it softens, take it out and put it on a clean kitchen towel, twist it well to drain the water.
Place the drained cauliflower in a bowl and mash it with a fork.
Add the egg, 1.8 oz (50 g) of mozzarella, salt, black pepper, 1 tsp. of olive oil and mix everything well.
Transfer the dough onto baking paper and use your hands to form a cauliflower base.
Bake the dough for 20-30 minutes at 480°F (250°C).
When it aquires a golden brown color on top, add the tomato sauce, oregano, chicken breast, mushrooms and the remaining mozzarella.
Place it back into the oven and bake it for a few more minutes, until the mozzarella has melted.
The flourless pizza with cauliflower base is ready.
