Ingredients

  • flaxseed flour - 3.5 oz (100 g)
  • oatmeal - 2.8 oz (80 g)
  • buckwheat flour - 2 tbsp.
  • spelt flour - 7 oz (200 g)
  • white flour - 7 oz (200 g) durum wheat
  • water - 11.5 fl oz (340 ml)
  • olive oil - 2 - 3 tbsp.
  • salt - 1 tsp.
  • fresh yeast - 0.5 oz (15 g)

How to make

In a bowl, stir the crushed yeast with half of the slightly warmed water and a little of the white flour, so that you a smooth mixture is obtained. Leave it to activate.

Mix all types of flour with the salt and add the remaining water, yeast and olive oil to them.

Mix initially and when the liquid is absorbed, add a little more, if necessary, since these types of flour absorb more liquid than usual.

Your dough should be smooth and medium soft.

Divide it into 10 parts and form a round bread roll from each. Arrange them in a baking pan - greased or covered with baking paper, by leaving a little space between them. In the middle, make cross cuts, which are about half a finger deep.

Cover the baking pan with a slightly damp clean cloth and leave it in a warm place for about an hour. The bread rolls should rise a bit. You may have to wait for them even longer, depending on the heat in the room.

Bake at 370°F (190°C) in a preheated oven for 25 to 30 minutes. You'll know when they're ready when you tap the crust and it makes a hollow sound. Also focus on the golden color.

Arrange the finished dietary rolls on a wire rack to cool, so that they will have a tempting crispy crust. If you are going to store them until the next day, store them in a well-sealed airtight container. This way, they soften, but you can always cut them in half before serving and bake them lightly in a dry pan. Then just imagine them smeared with something delicious or just drizzled with quality olive oil.

Apart from being delicious, these bread rolls are also healthy and can be present in any diet and the white flour can be completely replaced with spelt and the flaxseeds and oats can be increased.
